Hope everyone has had a good start to the week!
Just a fairly easy recipe today, which is absolutely perfect for those days where you don’t have any time but want something quick and filling 🙂
I feel like i’ve been a bit of a busy baking bee this week! Since writing more on here and baking/cooking a lot more recently I have ideas literally swarming my head!
I also got my travel bit on my blog up and running so have a big spur of motivation going, if you haven’t seen my first post (Taking Flight) do go and check it out! It really just explains why I decided to do it and would obviously be greatly appreciated ❤
THIS DISH WAS SO GOOD!
Soft courgettes filled with spicy beef chilli, topped with mature cheddar cheese and baked in the oven until bubbling and literally mouth watering-ly good. Honestly, just trust me on this one.
This recipe benefits so well if you have leftover Chilli made from the day before, even some in the freezer! It just quickens up the whole process really! If you don’t however have any, I have a pretty good one on my blog already (Beef and 3 Bean Chilli)
I feel like courgettes are so underrated! They are my faaaaavvvvourrrittteeee vegetable ever and really good for you.. which is something i need right now!
( diet life… need i say more!? )
The first thing is ‘hollowing out’ the courgettes, which is easy peasy! The hardest part if i’m honest was cutting the silly things straight #shakyhands but you’ll only need a spoon and a bowl to scrape out the soft fleshy part, leaving the not so soft bit of the courgette!
Once that is done, you simply stuff them with chill
and top them with some cheese…
the amount of cheese you decide to top them with however, is completely up to you.
There is no pictures of the courgettes after i’m afraid, the inner cheese demon in me couldnt resist pinching it off the top!!!
Serve it with a simple salad or maybe even some sour cream!
As I said, this recipe is only a quick one! It really is super yummy though!

This recipe serves: 2 Cook time: 45 minutes
- 2 courgettes, carefully sliced lengthways in half
- Leftover beef chilli – I used 2/3 tbsp per half
(if you need some chilli inspo’ Beef and 3 Bean Chilli)
- 80g mature cheddar cheese, grated!
- Preheat the oven to 180º celcius/ 350F
- After slicing the courgettes, scoop out the middle with a spoon and leave in a bowl to one side. Using the leftover beef chilli, fill the courgette halves generously.
- Top with grated cheese and bake in the oven for 15 minutes, until the cheese is bubbly and oozy… the chilli is hot hot hot and the courgettes are soft 🙂
- Serve and enjoy!
